Why 'he knows he did something wrong' is almost always a misread
Owners frequently tell me their dog "knows" they did something wrong because of how the dog reacts when caught — but that reaction is almost always a response to the owner's tone and body language in the moment, not evidence of the dog understanding the earlier misdeed. Dogs live largely in the present; the connection between an action minutes or hours ago and a punishment now is much weaker than it looks.
This matters practically: punishing a dog after the fact, believing they "know," reinforces fear of your reaction rather than teaching anything about the original behavior. Correction has to happen close to the actual moment to be useful at all.
